Canton Cooperage is located in central Kentucky, the heart of American oak forest. Member of the Chêne Group which includes Taransaud and Kádár, Canton produces barrels according to French tradition, using traditional air drying.
SEASONING
Natural seasoning is critical for American oak to achieve the best aromatic profile and softest tannins. The barrel staves are aged for a minimum of 24, 36 or 48 months in the open air. Our Kentucky wood yard is adjacent to the cooperage and provides the ideal seasoning environment in a temperate climate. The successive seasons, adequate rainfall and temperature amplitude allow the wood to slowly dry and mature. During this natural process, through the combined actions of water, sun, microorganisms and enzymatic activity, the staves acquire the desired characteristics that will give to the wine the finest aromas and tannins. Canton is the only American oak cooperage to have third-party certification of the duration of the open air-seasoning.

It takes patience, skill and passion to make a perfect barrel. At Canton we are proud to manufacture the finest American oak barrels. Each barrel is a testimony to the many years of experience and dedication of our master coopers. Our coopers have an average tenure of over 13 years and a total cumulative experience of over 600 years.

TOASTING TECHNOLOGY
Employing traditional open-fire toasting by highly skilled coopers, every barrel’s toasting data is monitored by computer and stored in a database. Canton’s proprietary toasting process is the result of years of careful research and development. The process is consistent, allowing each barrel to reveal its full aromatic potential.

To ensure full traceability from the forest to the barrel, we implemented a process that keeps track of all key information, for every step of production. This information is stored into our database and is accessible by a unique serial number on each barrel.

Wood Quality and Seasoning
We only purchase wood from the best American white oak sources and mills. Each stave is carefully hand sorted and inspected. This ensures our wood is of the highest quality, free from defects or sap wood. The staves are stacked according to a specific technique in our Kentucky wood yard to ensure even exposure to air and moisture, for optimum open air seasoning. Longer wood seasoning has proven to naturally soften the oak tannins and reduce the “green” compounds: hexanal, acetic acid and furfural.

A benefit of Spirit by Canton Barrels is their appearance and how they can complement your distillery, rickhouse or tasting facility environment. Each barrel is carefully sanded by our expert coopers, with the Spirit Premium and Spirit Grand receiving a second sanding for the ultimate quality finish. Rust-free galvanized hoops complete the top-quality appearance. We offer complimentary laser branding of your logo on Spirit Premium and Spirit Grand barrels.
Customize flavor with Char and Toast options
Barrels are pre-toasted over a white oak fire to prepare staves for the selected char. Our programmable char process ensures consistent burn depths throughout the barrel.
▪ Spirit Original – Standard char of 3-4 (“Alligator”) for a rich, traditional impact; charred heads.
▪ Spirit Premium – 4 customizable char levels to obtain the desired flavor impact; customizable head toast or char.
▪ Spirit Grand – 4 customizable char levels to obtain the desired flavor impact; customizable head toast or char.
For Premium and Grand, we also offer a range of toasting options (Medium Plus to Heavy toast) for a more subtle flavor impact.
